Did you know that the UN General Assembly declared 2016 the International Year of Pulses. Are you eating more pulses? I am not going to praise their wonderful properties today.  Instead I will send you a cake recipe I have just created.  It is a treat with nutritious ingredients.

Ingredients

250g Butternut Squash cut in cubes (it should work with pumpkin)

150g Nectarine cut in cubes

50g ground Almonds

zest of 1 Lemon

zest of 1 Orange (optional)

120g Split Pea or Chick Pea flour

1 teaspoon of Baking Powder

1 teaspoon of Vanilla Extract

60g Date Syrup

 

Method

1. Prepare all the ingredients and preheat the fan oven at 180 degrees Celsius.

2. Put the squash first in a food processor and then the nectarine cubes (you can keep few cut into smaller pieces to add at the end) to form a puree. Once it is homogeneous, add the vanilla, syrup, baking powder and almonds.  Mix well and fina…

2. Put the squash first in a food processor and then the nectarine cubes (you can keep few cut into smaller pieces to add at the end) to form a puree. Once it is homogeneous, add the vanilla, syrup, baking powder and almonds.  Mix well and finally add the pea/chickpea flour.  You can do that last step by hand if it is easier.   Mix in with a spoon (not with the processor) the zest and nectarine bits if any.

3. Pour the mixture in a rectangular cake mould. Mine measures 22cm by 12cm but do not worry it will work in different ones.

4. Put the cake on a middle shelve in the hot oven and leave it for 40 minutes.  When ready, it might be still wet inside, it just needs to cool down. It will last several days in the fridge. Try it as it is not difficult and let me know.
